Zserbó was among the top 10 in the desserts category in a 2010 online vote to find Hungary’s favorite dishes. This is a translation of a recipe published on mindmegette.hu. It makes 36 slices.
Ingredients:
For the dough:
350 grams flour
1 egg
50 grams sugar
200 grams baking margarine
100 milliliters milk
10 grams yeast
1 pinch of baking powder
For the filling:
120 grams ground walnut
120 grams powdered sugar
200 grams jam
For the glaze:
4 tablespoons cocoa
4 tablespoons sugar
50 grams butter
1 tablespoon egg white
Method:
Activate the yeast with one sugar cube and lukewarm milk. With your fingers, rub the margarine with flour, add the risen yeast mixture, sugar, an egg, a pinch of baking powder and a pinch of salt, and mix well. Separate the dough into three equal pieces and roll out each into a 35×25-centimeter rectangle. Make sure the dough does not reach the edge of the baking sheet as it will expand. Spread the jam on one piece of dough and sprinkle with half of the mixture of ground walnuts and powdered sugar. Place another piece of dough on top and place the filling on it the same way. Place the third piece of dough on top and cover the edges with it. Let the dough rise at room temperature for one hour.
Preheat the oven to 180 degrees Celsius (gas oven 2). Prick the dough and bake slowly until the top is a light red (12-15 minutes). When dough has cooled, glaze it with chocolate glaze. For the glaze, mix cocoa powder, sugar and a small amount of water until smooth and cook while stirring until very thick. Remove from heat, add butter, and stir until the butter melts. When it has cooled to lukewarm, mix in an egg white, then spread evenly on the dough and allow it to dry for a few hours. Once it has cooled off, cut into slices or squares and serve.
