
While the word zöldség (“ZUHLD-SHEG”), is derived from that for “green” (zöld), many or most vegetables eaten in Hungary are of the non-green variety. As with gyümölcs (fruit), there is still very much a seasonal cycle to the consumption of vegetables in Hungary, though in most towns fresh veggies are becoming available even in the dark of winter. Meanwhile, Hungarians remain somewhat indifferent to the joys of lightly-cooked fresh vegetables, at least compared to the Mediterranean countries just a few hundred kilometers to the south.
