Hungarians most often accompany vaddisznó meat with blueberries. Below is a translation of a recipe originally published on serpenyo.hu. It serves four to six people.
Ingredients:
1 kilomgram diced wild boar meat or leg
200 milliliters semisweet red wine
2 tablespoons blueberry jam
4 onions
5-6 garlic cloves
2 peppers
2 tomatoes
1 teaspoon ground caraway seeds
2 tablespoon pork or goose lard
1 tablespoon paprika
Salt
Pinch of ground pepper
Pinch of seasoning
Method:
Wash the meat well and dice it. Finely chop onions and dice peppers and tomatoes. Steam onions in lard, add crushed garlic and roast for a couple of minutes. Add caraway, peppers, tomatoes and steam for 10 to 15 minutes. Add meat, salt, pepper and stir continuously until all juices but the fat evaporates. Add a small amount of water, cover and steam. Repeat until the meat starts to soften and add wine and blueberry jam. Steam until the meat is tender. It is done when it has a small amount of substantial juice. Serve with plain galuska, galuska with juhtúró, tarhonya or potato croquettes.
