This recipe comes from A Mi Süteményes Könyvünk which was published by the Váncza baking powder company in 1936. While the recipes in the book don’t include head notes, this one was labeled as “különleges jó” (“especially good”). Feel free to substitute another brand of baking powder. Note that these days baking powder in Hungary comes in 12 gram packets.
Ingredients:
100 grams butter (or lard)
2-3 whole eggs
120 grams sugar
300 grams flour
250 milliliters milk
1 packet Váncza baking powder
50 grams raisins
Half packet of Váncza vanilla sugar
Zest of half a lemon, grated
Vanilla powdered sugar
Method:
Mix the butter (or lard) well with the eggs, sugar and flour. Add the milk, baking powder (mixed with a bit of flour), raisins, vanilla sugar and lemon zest. Mix well again for a short amount of time and pour into a pan that has been buttered and sprinkled with breadcrumbs. Put in a hot oven right away and bake at a medium temperature. To serve, sprinkle with vanilla powdered sugar.






I’ve tried this recipe (with some changes) and it is indeed extremely delicious. I’ve put instead of raisins chocolate chips and used 2 baking powder packages (20 grams total) and no taste of it stayed in the Kuglóf. I will for sure try it again with different types of fruits… and in the original recipe also!
