Wild Boar Salami

Wild boar meat is not a common ingredient of salami. This recipe was originally published in Hungarian on scribd.com.

Ingredients:
Roughly 10 kilograms wild boar meat
2 whole garlic bulbs
Paprika
Crushed black pepper
30-40 grams ground caraway seeds
Roughly 300 grams salt

Method:
Grind the meat and the garlic bulbs. Mix with paprika, crushed pepper, caraway seeds and salt, and combine well. Make sure to grind some császárhús (meat from the pig’s underbelly) as well, so it is not too dry. Fill the mixture into large intestines, prick the intestines with a needle and leave it at an airy place for 2-3 days before smoking. It will last long.
