Potatoes with Curd Cheese

Túrós Burgonya

Túró is the most popular type Hungarian cheese. This simple recipe comes from Az Emlékek Szakácskönyve, a book of short stories written by Gyula Krúdy and Krúdy family recipes.

Ingredients:
1 kilogram potatoes
300 grams túró
Butter (or margarine)
1-2 spoonfuls of sour cream

Method:
“We boil the potatoes and then peel and dice them,” writes the author. “We are pushing the curd cheese through a mesh sieve. We are spreading half of the potatoes in a well-greased oven-proof pan, and then we are sprinkling half of the cheese over them. We are now adding a bit of butter (or margarine) and one to two spoonfuls of sour cream on top. We are carefully salting it. We are adding the rest of the potatoes, and then the remaining cheese. Add more butter and sour cream to the top. We are baking it in the oven for 10 minutes.”

    Quick question for Carolyn: Why are the instructions in Hungarian translated into the present continuous?

    Wouldn’t it make more sense to to leave it in the present simple?

    For example, in my mind,

    “We are pushing the curd cheese through a mesh sieve.”

    should read:

    “We push the curd cheese through a mesh sieve.”

    ???

    we will making copy of shit recipe all day until we cook it when finish.
