Töltött Tojás

Stuffed Eggs

This recipe comes from Szakácskönyve by Mrs. Ferenc Móra. The recipe calls for serving the stuffed eggs warm, and she gives a variation for töltött tojás hidegen (cold stuffed eggs). “The method is the same,” she writes. “But we are adding ground ham and chopped capers, and pouring tartármártás over the eggs.”

Ingredients:
6 eggs
100 grams butter
350 milliliters sour cream
Onion, grated
.5 tablespoon breadcrumbs
Quarter bunch of parsley
1 tablespoon mustard

Method:
“We are cooking the eggs until they are hard, and when they are cooked we are putting them in cold water so the shells will be easier to remove,” writes Móra. “Then we are slicing them lengthwise and removing the yolks. We are mixing the yolks with a little butter, 50 milliliters of the sour cream, grated onion, parsley, salt, bread crumbs and mustard, and then we are scooping the mixture back into the egg whites. We are putting the eggs in a buttered oven-safe pan and generously pouring on the sour cream and sprinkling breadcrumbs over them. We are putting it into the oven and cooking it until it starts to bubble.”

    You are both right, it is plain stupidity to teach Magyar cooking to some Red Necks or other idiots who have no idea about what great food is about. You must have grown up eating the best meals in the world, i.e. hamburger, hotdog & and let’s not forget the Kraft dinners!!! By the way, in case you wonder, Yes I am Hungarian.

    @ Spada – nobody had to wonder if you were Hungarian, the poor English tipped the hat. Jo, by the way, is not native either, as it is ‘get with the program’, not ‘get on the program’, as a Hungarian might say it. And, Kraft does not make dinners, but they do put out a great mac and cheese. Red neck is a derogatory term, not surprising from most Hungarians who routinely slag off blacks and Roma. Red necks tend not to travel.

    As for the recipes, they are a nice addition, but perhaps used as filler too much, rather than original content.

    It just goes to show what some people are like. I bet the ones who have left those comments have not tried to learn the Hungarian language.I have and it is very complex. Most Hungarians speak a little English and they are a very kind race so lay off with your stupid comments.

    “Stuffed eggs” is called “deviled eggs” in the USA, so it does exist outside of Hungary.
    You don’t really need a recipe for it, boil the eggs, then mix the yolks with your choice of herbs and spices. Mustard, chives or parsley, ground pepper and anything you find in your kitchen will do for an experiment. I like to mix the yolks with goose liver pate, mustard, chopped parsley, ground pepper, paprika, and a pinch of salt. Of course – like everything else – it’s better with butter. Once you stuffed the eggs, mix sour cream and good Hungarian Univer mayonnaise (about half and half) and pour it on top. I would not call it cholesterol-free, but it’s pretty good to eat…
