The Cuisine of Hungary (George Lang)

Published in 1971, The Cuisine of Hungary is the most thorough history of Hungarian cuisine which exists in English. It is also a cookbook, which includes many of the classic Hungarian recipes. Lang, who owns the Café des Artistes in New York, was responsible for restoring and re-opening Gundel in 1992. He is also the author of a memoir, Nobody Knows the Truffles I’ve Seen, which was published in 1998.
