
Szürkemarha (“SURKA-MAR-HUH”) literally means “gray beef,” and comes from a variety of long-horned gray-colored cattle of the same name. It is increasingly common to find szürkemarha on the shelves of food retailers and on restaurant menus in Hungary, both as a “premium” alternative to normal cuts of marha, as well as an ingredient in sausages and other prepared meat products.
