Spenót (“SHPEN-OTT”), often called paraj (“PAR-AYE”), is one of the most venerable of Hungary’s vegetables. It is most commonly used to make főzelék, while its fresh leaves are added to salads. While it is most often found in frozen pureed form in grocery stores and hypermarkets, it is also found in public markets, where non-Hungarians routinely confuse it with sóska (sorrel).
