Rétes

Strudel

Rétes (“RAY-TESH”) is one of the things that Hungarian bakers do best. Strudel dough is best when it’s homemade, but pre-made rétes dough is also sold in supermarkets and so is a special strudel flour called rétesliszt. Rétes can be filled with practically anything. Common fillings include túró, cherries, sour cherries, apples, poppy seeds or plums. There are combinations like túró and dill, and poppy seeds and squash. Rétes can also be savory, with the most popular savory variety being cabbage. Tiroli almás rétes (Tirolian apple strudel) is filled with apples, raisins, and walnuts, and is often made with puff pastry rather than strudel dough.
