Tök is abundant in the markets in Hungary, and this simple recipe provides a simple way to cook it. The recipe comes from Az Emlékek Szakácskönyve, a book of short stories written by Gyula Krúdy and Krúdy family recipes.
Method:
“Clean a young squash and cut it into pieces,” writes the author. “In lightly salted water (with vinegar also added), boil the squash until it is halfway cooked, and then drain. In an oven-proof pan add layers of sour cream, pieces of butter, and bread crumbs to the top of the squash. Possibly, we can add cheese over it, and cook well.”
