Petrezselyemgyökér (“PET-RA-ZSHAY-EM DG-OO-KER”) is a root vegetable similar to the gyökér (parsnip) and which in Hungary is most often used in meat soups. It is also known as fehérrépa, or “white carrot.”
The strong-tasting leaves of the petrezselyemgyökér are often sold separately as petrezselyem, causing confusion for those who are looking for the other type of parsley.
