Tomato Soup

This soup was among the top 10 in the soups category in a 2010 online vote to find Hungary’s favorite dishes.

Ingredients:
2 tablespoons oil
1 tablespoon flour
500 milliliters tomato juice
1 small onion
Paprika
Salt
Sugar
Pasta or rice

Method:
Roast flour in oil until light brown. Sprinkle with paprika and add 1 cup of water, 500 milliliters of tomato juice and another 500 milliliters of water while stirring. Add whole onion to soup. Add salt and sugar to taste. Cook pasta or rice, stir into soup and serve.

    I like to add a stick of celery to the tomato juice or soup. Unfortunately celery sticks are not easy to find. Just like Pecorino Romano or Parmiggiano Reggiano cheese, roast beef, and a supermarket where they can make thin slices of fresh cold cuts.
    You have these big, boring supermarkets, selling lots of Italian pasta and pasta sauce, but no cheese to go on top.
    At least tomatoes are ok.

    Actually, I’ve had a lot of luck with Tesco on Vaci ut – they seem to be pretty consistently stocked with celery!
    For everything else I’m forced to agree with you. Although, if you’re willing to settle for Grana Padano, Aldi has it at a reasonable price.

    I found good celery pretty frequently in the Vasacaranok on Hold utca, Kaiser and at Nyugati Palyaudvar.

    I asked the wonderful Fausto/Osteria people where they got their cheese. Pomo Doro Trattoria (the little shop where they sell things next to the restuarant) is one place, Tomas Nagy’s cheese shop is another, and Culinaris near Paliament is the third place I can always get good Parmigiano.

    Now folks–where can I get sharp chedddar? This is my particular battle here. I like aged sharp Vermont cheddar; will settle for English. Culinaris has some, but its not ideal.

    Now that you mention it cheddar, I hope I don’t have to travel all the way back to New York for some extra sharp cheddar.

    I spent decades in the USA, craving for Hungarian food. Now I’m back, and there’s no local deli where I could get a roast beef sandwich, no local supermarket with a decent selection of cheese, no shelves full of USDA choice beef, no Italian sausages. Lots of imported junk food, but not the good stuff.
