Paprikás Krumpli

Paprika Potatoes

This recipe comes from Unokáinknak ajánljuk ("We Recommend it for Our Grandchildren") by Lejtényi-Waldhhauser. Despite its title, this dish does contain meat, and it's meant to be served as a main course.

Ingredients:
1 kilogram potatoes
2 large onions
50 grams smoked bacon
50 grams lard
100 grams smoked kolbász
2 tablespoons paprika
Sour cream
Salt

Method:
"We are melting the smoked bacon with one spoonful of the lard," write the authors. "Peel and then cut the onions into small cubes, sauté in the fat until they are clear. Take the pan off of the heat and mix in the paprika. We are peeling the potatoes, washing them, and cutting them into quarters. We're putting them in the onions and fat, and returning the pan to the stove and mixing it. We pour water on it to cover, salt it, and when it's almost ready we'll put in the sausage, and cook it for a few more minutes. We're serving it with sour cream."
