Márványsajt (“MARH-VAHNY-SHOYT”) is Hungary’s answer to the French Roquefort. It is a blue cheese made from cow’s milk instead of a sheep’s. Márványsajt is used in soups, salads, sandwiches, meat dishes, pastas and cakes. Sweet wines such as Tokaji Szamorodni and Tokaji Aszú go with it.
