Beef

While the fame of gulyás may lead some to believe Hungarians are a nation of beef-eating cowboys, marha (“MAR-HUH”) has long taken a backseat in the country’s kitchen to sertes (pork). Perhaps as a result, many consider the quality of beef raised and sold in the country to be second-rate; even with the increased availability of the much-hyped szürkemarha, there is a growing market for imported beef, including Irish T-bones.
