Májgombócleves was among the top 10 in the soups category in a 2010 online vote to find Hungary’s favorite dishes. This is a translation of a recipe submitted to nosalty.hu by user Beácska. It serves four people.
Ingredients:
100-150 grams chicken or pork liver
20 grams butter
1 onion
1 egg
1 heaped tablespoon breadcrumbs
2 heaped tablespoons flour
2 tablespoons water
Salt
Pepper
1 bunch parsley finely chopped
Vegetable or meat soup
Method:
Grind or finely chop the liver. Steam finely chopped onion in butter. Mix ingredients of dumplings in a bowl. Use a spoon to scoop a spoonful of mixture and drop it into the boiling soup. Turn down the heat and cook until dumplings rise to the surface (6-10 minutes).
