Lebbencsleves is a traditional dish from the Hungarian Great Plain, made with lebbencs tészta, big sheets of pasta which have been broken into irregularly shaped pieces. This recipe comes from Szakácskönyv by Ilona Horváth. Horváth notes that this soup can also be made with store-bought kocka tészta.
Ingredients:
50 grams smoked bacon
150 grams lebbencs pasta
Onion
Paprika
400 grams potatoes, sliced
Parsley
Method:
Dice the bacon and sauté it in its fat until it turns the color of a zsemle. Break the pasta into big pieces, and add to the fat, along with a small spoonful of onions. Sauté and sprinkle on some paprika. Add hot water and the potatoes, and cook very slowly until they are soft. You can flavor the soup with finely chopped parsley, green or dried paprika, or tomatoes.
