Forget lángos and palacsinta, kürtőskalács is the next big Hungarian fast-food phenomenon. Not only were the snacks, consisting of sweet dough rolled into pipes, backed gyro-style and coated in eight flavors of sugary powder, a big hit at the Vörösmarty tér Christmas market, Debrecen-based Kalácsoda also landed the “Enterpreneur of the Year” award from the National Association of Enterpreneurs and Employers (Vállalkozók és Munkáltatók Országos Szövetsége) last year.
The first Kalácsoda (kalácserie/wonder kalács) opened in Püspökladány (Hajdú-Bihar County) in 2003 from humble beginnings. Szíjgyártó admitted it was only six square meters in size and did not come close to meeting EU standards. One year later, however, it moved to Derecske, where more modern facilities were installed to serve a mobile store. The second mobile stand was opened in 2005 outside the Debrecen Tesco. Before the company could expand further, it needed to modernize again, which it did in Nádudvar. The chain now boasts a total of twelve stores in Debrecen, Tiszaújváros, Gyöngyös, Szolnok, Cegléd, Kecskemét, Százhalombatta and Budapest.
The family company, which employs 30 people and generated revenue of Ft 70 million (over €270,000) in 2006, now plans to franchise its network of mobile snack stands outside Hungary. Kalácsoda Managing Director János Szíjgyártó told napi.hu that they were mostly focusing on Austria, Germany, Denmark, Spain and the UK. “Kürtőskalács is a real “Hungarikum” and we can see it becoming very popular in the Union,” he added.
