Kürtőskalács (“KOOR-TOOSH-KAL-ACH”) originated in Transylvania, and is now most commonly found at festivals and fairs throughout Hungary. It’s a long thin strip of yeast-raised dough wrapped around a special instrument with a long handle, so it can be held over a fire. It is brushed with a sugar glaze, and rotated in an oven or over a fire until it’s cooked and the glaze has caramelized.
