Caraway seeds are called köménymag (“KOO-MENY MOG”) in Hungarian, mag meaning “seed.” Whole seeds are used in salads, körözött, bread, and salty, baked treats such as pogácsa. The spice is also commonly used for főzelék made from kelkáposzta and various meat dishes, and can be added to a rántás to make köménymagleves (caraway seed soup). It is an important ingredient in making savanyúság, especially sour cabbage, while its taste also well complements dishes made from potatoes, cheese and túró.

Can anyone tell me what “Cumin” would be in hungarian? I’ve variously seen it translated as kömény and édeskömény, but neither one seems right to me. I’m looking for Latin-food-type cumin. I bought something once that I thought was right, I think édeskömény, and it seemed to work OK. The next time, I forgot the édes part and just bought kömény – and wound up with ground up caraway seeds.
Any guidance would be appreciated!
For future reference if anyone sees my question here in future, turns out what I needed was “romai kömény”.
