Kolbász

While sausages are known in Hungary broadly as kolbász ("KOLE-BAS") they come in an enormous number of varieties, both fresh/soft and cured/dried. One highly popular variety is parasztkolbász ("peasant kolbász"), which is spicy and smoked.
