Kocka (“KOTS-KA”) translates as cube or square, and this dessert is so-called because it is sliced into a square shape. The filling – which can be practically anything – is baked on top of a piece of yeast-raised puff pastry. Poppy seeds, túró and fruit are common fillings, and the Bécsi kocka (Vienna square) has almonds and cinnamon added to the dough, and the filling is walnuts.
