This recipe comes from A Főzőkanál Művészei and was contributed by Teréz Rumi. The recipe serves 10. “Kertész módra” in Hungarian recipes usually means the dish is made with lots of vegetables and little or no meat.
Ingredients:
5 new kohlrabis, diced
500 grams chicken breast
80 grams butter
1 gram ginger
1 gram pepper
100 grams flour
50 grams bread crumbs
30 grams salt
55 grams onion
1 bunch parsley
2 eggs
2 egg yolks
300 milliliters cream
Method:
Sauté the kohlrabi in butter. Sprinkle with flour and add water. Add the chicken bones and skin and simmer. Season with salt, pepper and parsley. Grind the chicken meat, and mix it with salt, pepper, ginger, onions, parsley, eggs and bread crumbs. Add to the soup using a galuskaszaggató. Cook until the meat is done. Mix the egg yolk with the cream, and before serving add it to the soup when it is no longer boiling hot. Before serving, you can also sprinkle bits of butter on the soup.
