Rooster Stew with Curd Cheese Pasta

This Roma/Gypsy dish uses rooster, which is said to be as tasty as mutton. The rooster must be cooked for a longer time than chicken. The recipe starts from the beginning – with the killing of the rooster.

Ingredients:
1 old rooster
3 onions, finely chopped
Fat
2 spoonfuls paprika
1 tomato
Pepper
Hot pepper

Method:
Kill the rooster, scald it, gut it, and chop it into pieces. Fry the onion in fat until it is golden, add the paprika, the meat, and then the gizzards. Add salt, stir and let the stew cook over a low heat. Replace the evaporating liquid with small amounts of water when needed. When it is almost soft, add pepper, liver, tomato, paprika and hot pepper. Serve with túrós csusza.
