
The radish known by most English-speakers as “daikon” is increasingly available at Hungarian markets. Its most common Hungarian name, jégcsapretek (“YEG-CHOP RET-EK”), literally means “icicle radish,” but it is also called japán retek (Japanese radish) or kínai retek (Chinese radish). It is not found in any traditional Hungarian dishes, and is instead used like the standard red retek in salads, or eaten raw with buttered bread.
