Halkocsonya (“HOL KOCH-ON-YA”) is a variety of kocsonya (aspic) made from hal (fish) rather than disznó (pig).

The above plate of halkocsonya was taken at Café Bouchon in Budapest’s District VI in the fall of 2007.
