Halászlé
Fisherman's Soup

Halászlé ("HAL-AAS LEY") literally means "fisherman's juice," but is by any standard measure actually a leves (soup). It is prepared in a variety of ways in Hungary, and recipes vary from region to region. While it is traditionally made from ponty, it is also made from other fish, most notably harcsa, which tends to be more appealing to non-Hungarians.
