Liba háj

The word háj (“HI”) is most often used to mean the abdominal fatty tissue of a slaughter animal, especiallybaromfi (poultry) such as liba (goose, above), with or without the bőr (skin). (It also is used to describe human fat, however.) It is usually fried to make tepertő (cracklings) or rendered into zsír (lard) for cooking.
