Thickening Agent

Habarás is a method of thickening dishes by adding flour mixed with milk, sour cream, cream or water to the boiling dish. When making habarás, always add small quantities of the liquid to the flour to avoid it becoming lumpy. Stir the dish constantly while adding the habarás. If the recipe doesn't specify otherwise, add 200 milliliters of sour cream to 2 tablespoons of flour.
