Gomolya

Cheese Variety

Gomolya (“GO-MO-YA”), also called gömölye, is a Hungarian cheese variety. It is ripened for a very short time and is essentially a fatty túró made with a special bacteria culture, and is usually compressed into a round shape in a piece of cloth. Gomolya is made from both cow’s milk and sheep’s milk, the latter having a stronger taste. It is eaten by itself, used in salads and added for flavoring galuska. There is also a smoked variety.
