This recipe comes from Konyhaművészet by János Rákóczi. Francia saláta is commonly served with töltött tojás, potato salad with majonéz dressing and cold ham. These days many home cook substitute all of the fresh diced vegetables for a time-saving bag of mixed frozen vegetables.
Ingredients:
200 grams carrots
100 grams petrezselyemgyökér
100 grams kohlrabi
150 grams potatoes
150 grams peas (canned)
100 grams apple
100 grams pickled cucumber
Salt
Pepper
Lemon
300 milliliters tartármártás
Method:
“We are cutting the cleaned, peeled vegetables into small cubes,” writes Rákóczi. “And in salted water we are cooking them until they are soft, then we are draining them and putting them under cold water. We are dicing the cooked potatoes, peeled apple and pickled cucumber into small cubes, adding the canned peas, and we are mixing all of this together. We are salting it, and flavoring it with pepper and lemon juice, and we are pouring the tartar sauce in. We are serving it in a glass bowl and garnishing it with lettuce or mache.”
