“Tokány” is a Transylvanian dish similar to pörkölt made with smoked bacon and often mushrooms. The following recipe was originally published in Hungarian on receptstart.hu.
Ingredients:
700 grams wild boar legs
8 slices smoked bacon
2 tablespoons oil
6 garlic cloves
1 small spoon tomato purée
1 mocca spoon flour
1 small spoon salt
Ground pepper
Method:
Cut the meat into half-centimeter slices and the bacon into thin strips. Fry the bacon in oil, add the meat and fry while stirring until white. Add half of the crushed garlic, 1 slapped small spoon salt, tomato purée, pepper and 150 milliliters water. Steam until tender while stirring frequently and replacing water if it evaporates too much. When done, add rest of the garlic and thicken the juice with flour smoothly mixed with 100 milliliters of water. It is done when it has the consistency of a stew.
