Édeskömény (“AYE-DESH KOO-MENY”) is sometimes called ánizskapor, because its taste is similar to that of ánizs. In Hungary, fennel bulbs are rarely seen outside of international restaurants and gourmet shops, but the seeds (mag) are used in soups, salads and dishes made from fish. Currently, there are 1,500 hectares of édeskömény under cultivation in Hungary.

Can anyone tell me what “Cumin” would be in hungarian? I’ve variously seen it translated as kömény and édeskömény, but neither one seems right to me. I’m looking for Latin-food-type cumin. I bought something once that I thought was right, I think édeskömény, and it seemed to work OK. The next time, I forgot the édes part and just bought kömény – and wound up with ground up caraway seeds.
Any guidance would be appreciated!

You are looking for romai komeny. Hungarian dictionaries are particularly shit on herbs and spices, and they have cumin as the same thing as caraway seeds.
