Vinegar (“ET-SET”); Along with tejföl, vinegar is commonly added to soups at the table in Hungary – particularly tarragon vinegar (tárkonyos ecet). Salads, such as the ubiquitous cucumber salad (uborka saláta), are also dressed with a simple mixture of vinegar, water, salt and sugar. Perhaps because Hungarians are so fond of pickling, which benefits from strong vinegar, vinegar in Hungary is generally harsh. One popular brand sells white vinegar that is 10 percent, 15 percent and 20 percent acetic acid. Other types of vinegar made in Hungary are apple vinegar (alma ecet), white wine vinegar (fehérbor ecet) and red wine vinegar (vörösbor ecet). You can find balsamic vinegar (balzsam ecet) at specialty food shops.
