
Disznósajt (“DEES-NO SHOYT”) is the Hungarian version of what in American is called “head cheese” and in Britain “brawn.” Its name literally means “pig cheese” (from disznó and sajt), and it is one of the two major domestic specialties made from jellied pork. Unlike kocsonya, which is usually “loose” enough to be eaten from a bowl, disznósajt can be sliced as a luncheon meat.
