Csicsóka

Csicsóka (“CHEE-CHOKA”) are occasionally seen in Hungarian markets. As for how these “non-artichokes” are prepared locally, the néni who sold the ones pictured above in late 2006 suggested thinly slicing them, marinating them in vinaigrette, and eating them raw as a salad.

    csicsoka is a Hungarian name for Sunflower Artichoke or toupinambur and maz be eaten raw in salads or boiled till tender (like potatoes)
