Burgonyasaláta

Potato Salad

This recipe comes from Konyhaművészet by János Rákóczi. This recipe makes for a somewhat lighter alternative to the typical Hungarian-style potato salad in which the potatoes are dressed with a copious amount of majonéz.

Ingredients:
1 kilogram potatoes
Salt
Sugar
Pepper
Vinegar
Onion, finely diced
Tarragon, finely chopped
Parsley, finely chopped
Oil

Method:
Boil the potatoes. Peel and slice the potatoes while they are still hot. Mix all of the other ingredients (except the oil) with a little water, and add the potatoes to the mixture while they are still warm. To serve, drizzle a little oil over the salad.
