I would like to pick my own elderflowers when they bloom. Does anyone have a suggestion for a place in or around Budapest where I can find elderflower?
Bodza (Holunder in German) is used by some people to turn white wine into red wine – because they think they get 100 forints more per liter – really sad story …
Luckily it’s easy to detect
“HPLC analysis of anthocyanins in a red wine with
added elderberry extract, showed an extra peak in
the chromatogram, due to cyanidin 3-sambubioside-
5-glucoside from elderberry. Similarly, an
enhanced peak from additional cyanidin 3-glucoside
and co-eluting cyanidin 3-sambubioside was also
found. These two additional peaks, in a wine
chromatogram, may be used as evidence of
elderberry addition.”

Yes, if you have a lab with a Gaschromato ….(whatever) available – we just rely on out senses of smell and taste …
It’s really a shame: We’ve been offered really bad wine so often, we’re very careful now.
Of course there is a lot of good wine around Hungary – you just have to look for it …
I just want to try some stuff – not manipulate wine… That would be an awful shame!
So, do any of you guys know where to find the blooming elderflower?
