Birsalmasajt
Quince Jelly

Birsalmasajt ("BEERSH-ALMA-SHOYT") - sometimes written birsalma sajt - literally means "quince cheese" (from birsalma and sajt). It is usually made in Hungary in firm blocks, and widely available only in the months following quince season. The above picture was taken for this piece about birsalmasajt published in the fall of 2007.
