Cheese Variety

Anikó (“A-NE-KOH”) is a soft, low-fat, whitish-yellow Hungarian cheese with a mildly sour taste. It has a smoked variety.

    I have always in the past eaten a sweet cheese which is formed in a piece of wet cheese cloth that is hung from a cabinet hook so the whey can escape into a pot and then we would drink the sweet whey and wow!!! The cheese is wonderfuil but I am not able to find any recipes for it. I have my mother’s recipe from long ago but I was curious to see how other Hungarians made it or maybe they don’t. Both grandmothers from different villages in Hungary made this cheese. Any knowledge of this????
