Even though we’ve just made the executive decision to limit the Budapest Burgerwar™ to burgers made from meat that can be readily identified, don’t think we’re the kind of people who believe you always need to know what kind of critter you are eating to enjoy yourself. Especially in Hungary!

For your enjoyment and enlightenment, below are some of the most recognizable terms and items involving Hungarian meat products in which the origins and species of animal(s) involved are most obviously unrecognizable. While we’ve focused on things that are thoroughly mixed, whipped and/or extruded into a fine, flesh-colored paste, we’ve also included the chunky byproduct delight known as disznósajt, because it’s impossible to get head cheese out of your head once you know that Hungarians call it “pig cheese.”
